This project involved John Youngs creating a new kitchen at a top city centre Italian restaurant, Trattoria Rustica. The location of this 16th Century grade II listed building in Princes Street in the centre of Norwich, meant that the team had to operate within the confines of a courtyard.
Formerly the Old Princes Inn, the building opened as a restaurant in 1995. Its historic premises feature exposed flint walls, beamed ceilings, and an 11th Century crypt that dates back to the Norman invasion.
John Youngs' work involved demolishing outhouses to make way for an extension that doubled the culinary space. The kitchen's flat roof doubled up as a leisure area for the owners, thanks to timber decking and the creation of access from their flat above.
